John's Mom is a huge fan of any lemon dessert. I decided to make this Lemon Jello Poke Cake as a surprise for her. This is one of those family recipes that is always a hit.
I bought a huge bag of lemons from Costco during our last stay at home stock up trip. Now I am on a roll making new fun lemon dessert recipes. LOL!
Did you see the delicious Lemon Dutch Baby we shared earlier this week? Weeks at home gave me a ton of time to play with the recipe and tweak it until it was perfect and now a new favorite.
Even though it is weird to stay inside the house so much I am loving having time in the kitchen. Being able to spend time developing new recipes and updating old recipes has been my form of stress relief. I have been working on recipes that I first shared back in 2012 which is crazy.
Ingredients Needed for Lemon Jello Poke Cake
- Lemon Cake Mix
- Lemon Jello Mix
- Eggs
- Vegetable Oil
- Water
Ingredients needed for Lemon Glaze
- Lemons
- Powdered Sugar
Equipment Needed
Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
Hand Mixer/Stand Mixer - You can mix this with either a hand mixer or your stand mixer.
Heat resistant potholders- A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.
Recipe Tips
Make sure you grease and flour the 9X13 Cake Pan to make it easier to remove the cake
You can add the glaze to the cake while it is in the pan or you can put the cake on a cake plate and pour the glaze over it then.
I used a skewer to poke holes all over the top of the cake and they were pretty large. If you want to hide the holes you can use a toothpick so they are smaller.
Pour the glaze on the cake when it is warm so it soaks into the cake and makes it super moist.
You can easily use whipped cream or Cool-Whip for icing on this cake. Both are light and fluffy and can be added to the top of the cake.
A hand mixer makes it a lot easier to make this cake. I am in love with our KitchenAid hand mixer. I don't know what I did before I bought it.
I haven't tried making this recipe with sugar-free jello so I am not sure how it would taste. Please let me know if you try it.
I used fresh lemon juice since we had a ton of lemons in the house. You can also make this with bottled lemon juice.

Ingredients
Lemon Jello Cake
- 15.25 Ounce Lemon Cake Mix
- 3.4 Ounce Lemon Jello Mix Jello NOT Pudding
- 3 Eggs
- ¾ cup Vegetable Oil
- ¾ cup Water
Lemon Icing Glaze
- 2 Lemons Juice and zest
- 2 cups Confectioners Powdered Sugar
Instructions
Preheat oven to 350 degrees
Lemon Jello Cake
Combine Lemon Cake Mix, Lemon Jello Mix, Eggs, Water and Vegetable Oil in a large bowl. Mix until combined
Grease and flour a 9x13 baking pan
Pour cake mix into cake pan and bake for 35 minutes
When the cake is done and still hot poke holes all over the top of the cake.
Pour Lemon Icing Glaze over the cake while it is hot and evenly spread.
Lemon Icing Glaze
Juice and zest 2 lemons
Combine Lemon juice, Lemon Zest and Powdered sugar in a bowl until well combined

I’ve made lemon jello cake for decades. Last summer I tried it with sugar free Jello brand lemon jello. My 1st failure. With all fresh ingredients it didn’t rise at all. Was about the thickness of a pancake and very dense. Stick to the original recipe.
