  • 250g chorizo sausage (see note)

  • 1 tbsp olive oil

  • 500g Lilydale Free Range Chicken Thigh, trimmed, cut into 5cm pieces

  • 1 large brown onion, finely chopped

  • 2 garlic cloves, crushed

  • 1 red capsicum, finely diced

  • 1 tsp ground turmeric

  • 1 1/2 tsp ground cumin

  • 1 1/2 cups white rice

  • 400g can Coles Italian Diced Tomatoes

  • 2 cups Massel chicken style liquid stock

  • 1 cup frozen peas

  • 1/2 cup fresh flat-leaf parsley leaves, roughly chopped

  • Select all ingredients

4 Method Steps

  • Heat a large heavy-based frying pan over medium-high heat. Add sausage (250g chorizo sausage (see note)). Cook for 4 minutes, turning, or until browned. Remove to a plate. Cut into 1cm-thick slices.

  • Reduce heat to medium. Add oil (1 tbsp olive oil) and chicken (500g Lilydale Free Range Chicken Thigh, trimmed, cut into 5cm pieces) to frying pan. Cook for 2 to 3 minutes each side or until golden. Add onion (1 large brown onion, finely chopped), garlic (2 garlic cloves, crushed) and capsicum (1 red capsicum, finely diced). Cook, stirring, for 2 to 3 minutes or until soft.

  • Add turmeric (1 tsp ground turmeric), cumin (1 1/2 tsp ground cumin), rice (1 1/2 cups white rice), tomatoes (400g can Coles Italian Diced Tomatoes) and stock (2 cups Massel chicken style liquid stock) to frying pan. Stir until well combined. Bring to the boil. Reduce heat to low. Cover. Simmer for 15 minutes, stirring occasionally, or until rice is tender.

  • Remove lid. Stir through peas (1 cup frozen peas) and sausage. Cook for a further 1 to 2 minutes or until heated through. Sprinkle with parsley (1/2 cup fresh flat-leaf parsley leaves, roughly chopped). Serve.

What does traditional paella have in it?

Typically, paella consists of rice, vegetables, chicken or seafood, and traditionally, saffron. It’s also made and served in one pan, which makes it a real winner in our book. We've given a budget-friendly twist and used turmeric to create our vibrant yellow rice, instead of sourcing saffron. As this recipe demonstrates, you don't need a paella pan to make this paella rice dish. If you like, you can serve it with some green beans with your classic Spanish rice dish. Although short grain rice will also work, you can use long grain rice or medium grain rice in this not so traditional paella recipe.

Do you put chorizo in paella?

Although chorizo isn’t used in traditional paella, many cooks opt to incorporate it into the dish as a quick flavour hack because of the salty, spicy and meaty flavours it brings. If you don’t like chorizo, feel free to leave it out. But we think a chorizo paella is a thing of beauty for a speedy weeknight meal.

What is a suitable substitute for chorizo?

Chorizo sausages are spicy sausages. Look for them in the deli section of your supermarket or from delicatessens. While most supermarkets will have chorizo, if you can't find any you can use any spicy sausage in its place.

Is arborio rice okay for paella?

Since arborio rice is a shorter grain, it works well for paella as it absorbs much more liquid. It’s quite similar to the traditional rice used in paella - bomba rice - which will make the taste and texture very similar to the kind you’d get in Spain!

What kind of seafood can I add to a paella recipe?

Seafood paella is an extremely popular and delicious variation of the dish. The best kinds of seafood to use in paella are prawns, mussels or clams, and a firm white fish like sea bass.

What is the history of the paella recipe?

Paella was originally a food created and enjoyed by the workers and labourers of Valencia, Spain. In fact, farmers in the Valencian countryside enjoyed it as an easy lunch, by throwing rice and any other ingredients they had on hand (like vegies and meat) into a pan with oil. It’s safe to say that the paella recipe has humble beginnings!
