Texas Trash Dip is the ultimate warm gooey bean with southwest flavors and lots of melty cheese, baked to perfection. With refried beans, cream cheese, sour cream, green chiles, and plenty of melted gooey cheese, this dip has got it all!

Texas Trash Dip is a warm creamy, cheesy southwest bean dip topped with lots of gooey cheese and baked to perfection. It's super easy to make, and while it's not the prettiest dip, it certainly makes up for its lack of looks in warm, gooey, zesty flavor.

I could seriously make a meal out of this dip. Unfortunately, I'm always forced to share with my kids, who have similar ideas about making it a meal (I'm thinking double trays in the future....)

Refried beans, cream cheese, sour cream, taco seasoning and lots of CHEESE! I mean, what's not to love?

Why is it Called Texas Trash Dip?

Guys. I searched and searched, and honestly, I have no idea where the name came from! The best I can come up with is that it's sort of like a "dump dish," where you just dump all the ingredients together. Since all the ingredients are staples in Tex-Mex cooking, that's where the "Texas" part comes from.

It's also know as Warm Bean Dip, which seems like a much more apt name. But the name Texas Trash Dip is kind of fun, so I think I'll keep calling it that.

Can I Add Any Extra Flavors?

Yes! Texas Trash Dip is absolutely delicious as is, but variety is the spice of life! So try some of these toppings or add-ins!

  • Cilantro - some fresh cilantro on top will make this dish look beautiful and taste amazing.
  • Jalapenos - Mix the jalapenos right in or add them on top for garnish. Fresh and jarred will both work for this recipe.
  • Pico de gallo or salsa - Add some on top as a garnish and to add a little bit of bright flavor.
  • Cheese - Change up the cheese. Try some chihuahua, regular cheddar, regular mozzarella, Colby Jack, or any other cheese that will melt well.
  • Corn - Stir this in to really Tex-Mex it up.
  • Chorizo - Add some spice, flavor, and a little extra protein too! Cook and drain before adding.
  • Ground taco meat - A great way to use up leftovers. Just toss it right in with everything else.

What to Serve with Texas Trash Dip

Texas Trash Dip is usually served with tortilla chips. You can mix it up and serve with corn chips or even crackers in a pinch. Or if you're looking for some healthier options to throw in the mix too, bell pepper strips would also be delicious.

Can I Make it Ahead of Time?

Yes. Prepare as the recipe instructs. Transfer to a 9"x13" baking dish, then cover and refrigerate until ready to serve. Add about 10 to 15 minutes to the baking time to account for the cold ingredients and dish.

Ingredients

  • 8 ounces cream cheese
  • 1 cup sour cream
  • 2 (16 ounce) cans refried beans
  • 1 (4.5 ounce) can chopped green chiles
  • 1 packet taco seasoning
  • 4 cups shredded Mexican blend cheese divided
  • Tortilla chips for serving
  • Jalapeno slices and fresh chopped cilantro for garnish optional

Instructions

  • Preheat oven to 350°F.

  • In a large microwave-safe mixing bowl, microwave cream cheese and sour cream for 1 minute, until softened.

  • Whisk until smooth.

  • Add beans, green chiles, and taco seasoning, and whisk until smooth.

  • Fold in half the cheese.

  • Transfer to a 9"x13" baking dish. Top with remaining cheese.

  • Bake at 350°F for about 25 minutes, until heated through and cheese is melted and bubbly.

  • Garnish if desired. Serve warm with tortilla chips.

Notes

  • This dip is naturally gluten free.
  • If you're bringing this dish to a potluck, use a disposable pan for easy clean up!
  • Taco seasoning: If you'd rather use homemade taco seasoning, use about 3 tablespoons. Here's my go-to homemade taco seasoning recipe.
  • Refried beans: Canned beans work great in this recipe. You can also use homemade. Here is my all-time favorite refried black beans.
  • Make Ahead: Prepare dip according to instructions up to 3 days ahead of time. Cover and keep in the refrigerator. Bake time will need to be adjusted to about 10 minutes longer to account for the cold dish going into the oven.
  • Storage: Store leftovers covered in the refrigerator. Reheat in individual servings in the microwave or the whole pan in the oven at 350°F for about 30 minutes, until heated through.
